			<content:encoded><![CDATA[<p>The pizza tools you use are second only to the ingredients that go into the pizza.  Once you know how to make a good pizza you only need the tools to do it.  Basically the tools are a good oven to do the baking and a sheet pan or pizza stone to do the baking on.  However there are many other tools that can also be used, especially if you are in the business or otherwise make a lot of pizzas.</p>
<p>The oven can be any electric or gas oven.  The Cadillac of ovens of course would be a brick oven but these are expensive and even though they produce the most even heat a standard oven can work well also.  By being careful about how often you open the oven, and the placement of more than one pizza, a standard electric or gas oven or a special pizza oven can also make an excellent pizza.</p>
<p>A good sheet pan or pizza stone will make all the difference.  The key in the baking is even heat and a good solid pan will work fine although a pizza stone will work even better.  The oven must be completely pre-heated and if you use a pizza stone be sure to put it in while the oven is still cold so it slowly warms up along with the oven in order to prevent cracks or fractures.  Stones will make the pizza crispier because the stone will absorb some of the moisture while baking.  If you are using a stone you will want a pizza peel which is like a flat shovel with a long wooden handle that allows you to place the pizza on the stone and remove it when done.</p>
<p>A pizza screen is your best bet if not using a sheet pan or stone.  These are thin and allow the heat to reach the bottom of the pizza more easily.  And the holes allow the moisture to be released from the pizza dough helping to make the crust crispy similar to a pizza stone.  These are recommended if your oven is not conventional and the heat is uneven.</p>
<p>If you are using regular pizza dough that you purchased you can work the dough into shape with your hands.  Otherwise you might be better off using a rolling pin to get the dough into the proper thickness without tearing it.  </p>
<p>If you make a lot of pizzas there are several items that may help.  A scraper can make the dough cleanup process easier.  Wire shelves allow you to stack several pizza shells until they are needed.  Dough rings can be used like a cookie cutter to stamp a pizza shell out of rolled dough.  Square or rectangular pans are available if you will be making Sicilian style pizza.</p>
<p>A pizza wheel is a handle with a blade shaped like a round wheel.  After the pizza is baked you roll the edge of the wheel across it to divide it into individual slices.</p>
<p>Making pizzas with the right equipment it can be enjoyable so why make it a chore?</p>
